Language Attribute Specification

I'm attempting to bring a large number of pdf's into compliance with the accessibility checker. One standard is that the reading language must be set, which can be done manually from the advanced properties tab. I need to automate this step, but can find no reference to this in the xmp documentation, and I'm completely baffled as to how this is being set.

This is a high priority for me, please help. Thanks in advance!
